Apricot Cake

I’m a sucker for apricots. Also for sesame but that’s a different story. Anyway, I really like apricots since I was a kid, and I loved an apricot cake my mom used to make. So… I just made one. Came out great. Here’s the recipe. 

Apricot Cake
  • 150g very soft butter
  • 1/2 cup milk
  • 4 eggs
  • 1 tbsp apricot jam
  • 1 cup sugar
  • 2 cups flour
  • 2 tsp baking power
  • 8-10 apricots, washed and halved.
Heat oven to 325f with convection (340f without)
Mix all liquids well. Add sugar, flour and baking powder and mix well.
Pour into a 10″x10″ greased (with butter) baking pan.
Gently place apricot halves tight on top without pushing them in.
Optional – sprinkle on top some brown sugar.
Bake for 35-40 minutes
Optional – spread sugar powder after cools down.
